Meals and BeveragesFrom tree to table, from quality local suppliers, and from our own hands, we create mouth-watering culinary delights, wrapped in caring and love. Vegetarians, vegans, and those with special food needs are lovingly accommodated.
Foodies are enthusiastically invited to participate in cuisine creation. Playing with your food is encouraged! Get up-close-and-personal with the food you eat: It is yet another way to connect with the earth, and with your own nourishment. Experience 'digging in the dirt' in our on-site organic garden… harvest fruits, vegetables, and herbs for daily meals, and just enjoy a simple way to bond with our planet. There are other ways for non-foodies to get connected… you may be a gatherer, or may just wish to sip a glass of fine organic BC wine. In whatever way, connection with your meal's creation is paramount to the fullness of your enjoyment. You will flush with fulfillment at having joined-in. Menus change depending on each day, each season, and according to guest desires…with mother nature providing the most basic ingredients at her whim. Daily Food Experiences at the Retreat“Morning Indulgence” is brought to your cabin, at whatever time you awaken. Whether you prefer latte, tea, or other hot or cold beverage, it is a gentle way to warm up to your day…along with a little treat that is kept as a secret surprise. If you aren't a lounge-in-bed-with-your-latte kind of person, watching the sun rise at Sunshine Point with a warm beverage is also a favoured client experience. In addition to warm robes provided by the retreat, extra wraps are available for cooler mornings at Sunshine Point. Bathrobes and Bed-head are not only acceptable morning attire, they are encouraged. We especially look forward to the many variations of “bed-head” every morning, and sometimes a prize is awarded. Luncheon is generally eaten wherever you desire…riverside, at the beach, on the trail…it depends upon on each day's journey. Tapas are served pre-dinner with a glass of wine. Depending on the day (how late lunch was consumed, what type and when dinner is served, the type of appetizer), tapas may not always be appropriate. Fine wine complements your dining experiences. A modest collection of premium organic wines, BC VQA (Varietal Quality Assurance) wines, and other fine wines are always on hand. Organic lagers and ales are supplied for non-wine lovers. De-alcoholized wines and other soft beverages are served to those who so-desire. Snacks are available whenever requested, as are soft beverages. |

Finest and FreshestGreat cuisine commands great ingredients! Do you know where you food is from? We do.
The on-site organic garden is an important feature at the eco retreat. Not only does it provide the basis for most of our delicious cuisine, it also provides an important link we miss in today’s world between what shows up on our plates and how it got there. Each minute spent “working” in the garden provides nourishment for the earth, our tummies, our minds, and our souls. There really is no way to adequately describe the taste of freshly-harvested produce: the incredible mouth-watering flavour of a sun-warmed strawberry… a just-picked tomato eaten like an apple… a carrot still moist with earth. Fresh from the organic garden, a nutritious variety of seasonal vegetables are experienced in every meal. Fresh from our small orchard seasonal fruits and berries abound. Culinary herbs are grown just steps from the kitchen door. Organically-raised meat, poultry, and eggs come from Decker Farms, a short 15 minutes from the Retreat. Our long-standing relationship with Diana Decker of Decker Farms ensures us the finest possible organic food ingredients. Calves are raised on fresh milk and field forage…organic chicken feed is supplemented with flax to increase omega “good” fat in eggs, and to provide the finest flavour in poultry. Fish and seafood are sourced from local fisheries that are proven to be sustainable. Salmon, when ecologically safe to do so, is provided by a local Native commercial fisher from the Fraser River. Shellfish is sourced from reputable suppliers reporting sustainable origins. Cheeses are sourced from a variety of places, the most local being 30 minutes away at Farm House Natural Cheeses. Yogurt is from Local Fraser Valley Dairies within one hour of the retreat Grains, while sourced from Anita's Organic Mill 45 minutes from the Retreat, come mainly from the Canadian Prairies. Wines, for the most part, are local. One of our main wineries represented in the retreat cellar is Lotusland Vineyards, an organic winery about one hour from the retreat. Other local Fraser Valley Wineries and Okanagan Wineries are well-represented at the table. Occassionally a good organic wine appears from far away lands and we bring it to the table as a rarity. Beverages – Juices are mainly made on-site, as are Kokahitos, with some organic apple juice from the Fraser Valley or the Okanagan. Beers are sourced from a variety of BC micro-breweries.
While every effort is made to put the most local fresh ingredients into foods created At Kw'o:kw'e:hala, we will not sacrifice “the best” from afar. Examples of these foods are:
Until premium products can be found locally, or even on this continent, a small percentage of our foods will continue to be sourced from afar. Bon Appétit! |
